From what I’m seeing on the news each morning, we are so fortunate that it’s stayed in the low to mid-80s here in the Bay Area because elsewhere around the nation it’s hot hot hot! When it gets like this, we struggle to stay cool and hydrated and the last thing we want to do is slave over a hot stove or turn on the oven. In addition to my corn salad, I personally have been enjoying a lot of watermelon this summer and am beginning to venture beyond simply eating it in cubes. (Although your kids may like eating them in fun cut-out shapes using cookie cutters!) Here are a few healthy “no cook” recipes featuring watermelon that have caught my eye!
