5.18.11: What’s for dinner Wednesday? Pesto Pasta Salad

Pesto anyone?

Fresh pesto tastes amazing yet I always forget how easy it is to make! Recently, while doing the weekly grocery shopping I passed the basil containers and recalled a cold pesto pasta salad I had in Italy that was delicious. Thanks to a quick tutorial from my friend’s aunt who introduced us to this dish, it is easy to make! It’s perfect for summer and you can serve hot or cold. Like I said, I prefer it cold.  Serve with flavored sausage like artichoke heart or sundried tomato. Also a hit with grilled chicken!

Shopping List:
Fresh basil leaves
Pine nuts or walnuts
Parmesan-Reggiano or Romano cheese
Garlic Cloves
Grape Tomatoes
Mozzarella Cheese Balls
Bowtie/Capellini/your choice of pasta

Meat of your choice (see above)

This recipe from Simple Recipes is the fastest!

2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
1/2 cup extra virgin olive oil
1/3 cup pine nuts or walnuts
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste

Special equipment needed: A food processor

Method
1. Combine the basil in with the pine nuts, pulse a few times in a food processor. (If you are using walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few times more.

2. Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.

You can cook the pasta while you are making the pesto. Once the pasta and the pesto are finished (if serving cold, run cold water over the pasta and be sure to refrigerate for an hour before you serve, otherwise), combine pasta, pesto, tomatoes and cheese balls in a large bowl, stir and serve!

5.5.11: Favorite Cinco de Mayo Foods

A very Happy Cinco de Mayo to all today, a great day to celebrate the Mexican heritage and pride! As most Americans, the best way I know how to celebrate Cinco de Mayo is by eating my favorite kinds of Mexican foods – which my favorite kind of food year round too!

I took a very informal poll in the office to see what everyone loved to eat and drink for their Cinco de Mayo celebration.  And found (though not tested), some possible recipes to make your own food celebration!

Salsa (I love salsa with fruit!)

Cerveza (these you might just buy at the store but here is a link to brew your own…maybe for next year!)

Trust Your Instinct!

When do you start listening to yourself and stop listening to everyone else around you? As a new mom, it’s a hard thing to decipher when you are feeling overwhelmed and like you haven’t got a clue. It seems everyone else has so much more knowledge know-how and everything you do is wrong and if you’re not careful you’re going to permanently damage your new baby. But then you run into one too many moms who tell you everything you should and should not do and how if you don’t do it their way then your baby isn’t going to see its first birthday – or at least that is how you feel! However, as your baby gets older you start to gain a bit more confidence and by the time you have the second you start to feel like you might have the hang of this parenting business! And if you aren’t careful, you turn into one of “those moms” that is telling everyone how to raise their child.

My eldest daughter is 3 years old and the baby is seven months (and just started crawling this weekend – we are in for it now!) and I feel like maybe I have the hang of this parenting thing! This is typically a short-lived feeling as one of them will do something that will leave me so speechless and at a loss for words that I feel like I am back three years ago when my first was a baby… the beauty of parenthood!

Over the weekend, a girlfriend who is a new mom was asking my opinion about a certain issue she was having and I started to tell her how I would do it and I looked at her and I saw myself as an earnest new parent and how all I needed was someone to believe in me and give me the confidence to make those decisions. I turned to her and said, “Just trust your instincts. You will know what is best for your baby!” She smiled at me and nodded her head and I felt like it was the best advice I could have given her!
